Current goat milk production, characteristics, and utilization in Indonesia

Abstract In Indonesia and some southeast Asian countries, the number of goats raised for milk production is growing. these goat second most produced consumed after cow milk. Indonesia, dairy goats’ development promising, but farming marketing products still scattered unstructured. The from varieties breeds, including Peranakan Etawa, Saanen, Nubian, their crosses. Goat has unique distinct characteristics an excellent source nutrients humans. Compared to milk, it smaller fat globules, more homogenous, shorter rennet coagulation time, softer curd. utilization includes fluid direct consumption; frozen fresh milk; dried or powdered fermented such as yogurt, kefir, its derivatives cosmetics, concentrated yogurt cheese, ice cream, shakes; cheeses cottage-type acid-coagulated cheese mozzarella; also, other traditional sweets & candies caramels. consumption driven by several factors, low cost start-up production, consumers’ demand, alleged health properties products.
