Compared to milk, it smaller fat globules, more homogenous, shorter rennet coagulation time, softer curd. utilization includes fluid direct consumption; frozen fresh milk; dried or powdered fermented such as yogurt, kefir, its derivatives cosmetics, concentrated yogurt cheese, ice cream, shakes; cheeses cottage-type acid-coagulated cheese mozzarella; also, other traditional sweets & candies caramels. consumption driven by several factors, low cost start-up production, consumers’ demand, alleged health properties products.
